FRENCH BREAD

1 package dry yeast
2 cups water (lukewarm) 
1 egg white
1 teaspoon granulated sugar
2 teaspoons salt 
6 cups bread flour

Dissolve yeast in warm water. Add all ingredients. Mix thoroughly by hand, bread machine or you may use a mixer that is big enough for bread mixing. Let rise in warm place for about 30 minutes; punch down and let rise 30 minutes more. Cut into 2 pieces and shape into long loaves.

Put on greased cookie sheet or put on parchment paper. Wash the top with egg white. Cut the top like you see it done on bread page. Let rise to double size. Bake 5 minutes at 400 degrees then for 20 to 25 minutes at 375 degrees.  

Tip: To make your bread rise better - bake about one minute - then spray about 3 squirts of water into oven; shut door and bake as above.
